  1. Grilled chicken skewers with vegetables

Ingredients:

  • 1lb organic chicken breasts
  • 3 organic bell peppers
  • 1 organic red onion
  • 1 organic broccoli stock
  • 1 organic potato
  • 1/3 cup avocado oil
  • garlic powder
  • paprika
  • sea salt

Recipe:

  1. place organic avocado oil, garlic powder, paprika, and sea salt to a bowl, stir to combine
  2. Dice chicken and veggies
  3. Add all chicken and vegetables but potatoes to the bowl with the marinate^
  4. Put it in the fridge for an hour (longer for more flavor)
  5. preheat grill
  6. add chicken and vegetables to skewers
  7. cook until chicken is well done. 5-7 minutes each side.
  8. sprinkle with lime juice and enjoy!

2. Caprese salad with fresh tomatoes, mozzarella, and basil

Ingredients:

  • 12 oz mozzarella
  • 3 whole organic tomatoes
  • sea salt and pepper
  • basil leaves
  • balsamic vinegar

Recipe:

  1. boil 2 cups of balsamic vinegar in a pot over medium heat until the sauce turns into a thick glaze.
  2. while the balsamic vinegar is cooking: cut up mozzarella into slices and cut up tomatoes into slices
  3. layer tomatoes and mozzarella back and forth
  4. season with salt and pepper
  5. drizzle the balsamic vinegar on top and enjoy!

3. Quinoa salad with grilled vegetables and feta cheese

Ingredients:

  • 3/4 cup water
  • Avocado oil
  • 2 cups quinoa
  • 3 1/2 cup vegetable stock
  • sea salt and pepper
  • 1 red onion
  • 1 cucumber
  • 1 cup red grapes
  • 1/4 cup lemon juice
  • 1/3 cup mint leaves
  • 1/3 cup basil leaves
  • 4 oz feta cheese

Recipie

  1. spray pot with avocado oil
  2. add quinoa let sit until brown
  3. add water and salt until the quinoa comes to boil
  4. once comes to boil let it simmer for 15 minutes
  5. let it cool
  6. meanwhile, take the red oinion, cucumber, and grapes and chop it up into 3/4 inch
  7. once quinoa is cool add to a bowl with the veggies
  8. In another bowl add lemon juice, and 3tbs of avocado oil. mix
  9. drizzle dressing over salad. top with basil and mint leaves. and enjoy!

4. Watermelon and feta salad with mint

Ingredients:

  • 1 watermelon (2 cups)
  • 1/3 cup feta
  • 1 chopped cucumber
  • 1 mint plant

Recipe:

  1. add 2 cups watermelon balls to a bowl
  2. follow with 1/3 cup feta
  3. add 1 cup chopped cucumber
  4. mix all together
  5. and top with a pinch of mint

5. Grilled shrimp tacos with avocado and mango salsa

Ingredients:

  • 1lb shrimp (more nutritious)
  • sea salt
  • avocado oil
  • 10 siete tortillas
  • 1 mango
  • 1 avocado
  • 1/3 red onion
  • 2 limes
  • sea salt
  • cilantro
  • tajin

Recipe:

  1. prepare the salsa: chop everything up (except shrimp and tortillas) place in a bowl and mix. squeeze two limes over the salsa and top with cilantro leaves
  2. heat up grill. thread shrimp through skewers season with tajin.
  3. grill shrimp 2-5 minutes on each side. until they become flamingo pink
  4. remove shrimp from grill
  5. lay out tortillas and pile on shrimp and salsa
  6. Enjoy!
